Chemical Properties
Peroxydisulfate contains peroxide groups and functions as a strong oxidizing agent capable of oxidizing Mn²⁺ to MnO₄⁻. Ammonium persulfate is produced through electrolysis of ammonium bisulfate aqueous solutions.
S₂O₈²⁻ + 2H₂O ⇌ 2HSO₄⁻ + H₂O₂
The resulting solution contains ammonium ions, peroxydisulfate ions, hydrogen sulfate ions, and sulfate ions. The hydrolysis process creates an acidic solution, with nitric acid addition inhibiting the forward reaction.

Ammonium persulfate is used in the food industry as a flour treatment agent and dough conditioner (E number E923). It acts as an oxidizing agent, strengthening gluten networks in dough by forming disulfide bonds between protein molecules. This results in improved dough elasticity, stability, and gas retention, leading to baked goods with better volume, finer crumb structure, and enhanced texture.
